Maybe its in our philosophy. You know, like 'The pursuit of happiness' where we are driven to smoke and drink and eat like its going out of style. Not that I haven't tried it, but some people really take it seriously.
Fried foods are bad enough, but then we try "deep frying" to add insult to injury. We try buying foods with "No Sugar Added" that are packed with High Fructose Corn Syrup. We think 'skinny' cigarettes are healthier. And I can remember when 'two out of three doctors' recommended a certain brand of cigarette (OK, maybe they don't do that anymore, but might if they were allowed to).
And now, with many people without lots of money, a method of 'getting by' is to eat foods higher in carbs. Thats not good.

Yes, our healthcare is utter garbage.
The bigger question is when will we change it to a non-profit system?
