Shop Talk

Sam Smith - I believe this is the first time in over 50 years that I have recommended a way of cooking something. My underlying belief is that the foodie movement is a plot by the elite to substitute food choices for political ones. If we're busy selecting the right kale we won't notice that our democracy is in shambles.

That being as it may, I can't find where I could have learned this, but I regularly put butter and maple syrup on my crab cakes and they are delicious. I believe this may be a southern recipe but can't find any proof.

Authentic maple syrup is good on almost everything.
Of the few things this writer misses from New England, it is maple syrup, and especially the smells of the region during sugar season.
Out of curiosity, how would you compare the crab cakes of Maine to those from the Chesapeake? Baltimore may hold the title with their blue crab delicacies..., but they've got nothing when it comes to maple syrup.

I confess to favoring Maine crab but I try not to talk about it.
