Rachel, a "devoted reader (but a kale lover)" from Portland OR cites a chart we published on changes in food supply to blow a hole in our contention that there is a kale konspiracy and that one of its targets is our beloved spinach.
The chart, which mostly notes changes between 1972 and 2012, finds that there has been a 446.8% increase in the availability of spinach, even more than the 366.6% for diet soda (1972-2004). Collard greens are up 21% and Brussels sprouts up 35%.
Kale, however, was actually down 10.1% between 1997 and 2012.
We will say in our defense that the kale propaganda has only increased in the past few years and so we may have to wait for later data to to see whether these figures are just a tad out of date.
And there is, of course, the possibility that kale enthusiasts gab about it more than they actually eat it, but for the time being we will put the kale konspiracy thesis on hold.
